The Role

Join us as Head Chef, where you’ll lead the culinary vision across Carmichael’s Restaurant, the Under the Desert Moon dining experience, the staff outlet, and the Bruce Munro Light Towers. This role offers you the chance to shape an unforgettable fine dining journey in the heart of the desert, focusing on premium local ingredients and exceptional quality.

Key responsibilities will include but are not limited to:

  • Create and present dishes that delight, with consistent excellence.
  • Oversee kitchen operations, including stock and waste control, scheduling, food costing, budgeting, and staffing.
  • Uphold strict health and safety standards, ensuring a spotless kitchen environment.
  • Inspire and mentor your team to deliver standout dining experiences and unique, signature menus.
Skills & Experience
  • Previous experience as a Head Chef, ideally within a similar setting
  • Background in fine dining, with high-level culinary skills
  • Formal trade qualifications in commercial cooking or equivalent hands-on experience
  • Strong skills in electronic purchasing, cost management, and budgeting
  • Proven track record in menu planning and development
  • Excellent preparation and organizational skills
  • Current First Aid Certificate (highly desirable)
  • Essential HACCP experience, with a focus on food safety and hygiene
  • A current driver’s license

This is a remote role, where you will be living and working at Kings Canyon Resort. As such, please consider the reality of living in a remote location for an extended period of time. This role includes extensive manual handling tasks including lifting up to 20kg kneeling and squatting, as well as handling chemicals and utilising machinery
