NYC BAGEL is seeking a Head Sourdough Baker to oversee and coordinate the production of artisan baked goods, ensuring consistent quality and alignment with NYC BAGEL standards. This role also involves managing the daily operations of the bakery, promoting team efficiency, and ensuring full compliance with workplace health and safety regulations.

Benefits

  • $70,000 - $80,000 per annum + superannuation.

Tasks & responsibilities

  • Supervise the daily operation of the bakery and ensure compliance with health and occupational safety regulations.
  • Responsible for product quality and adherence to service standards and manuals.
  • Evaluate the quality of raw materials and measure the necessary ingredients.
  • Knead, ferment, cut, mould, mix, and shape dough and pastry products.
  • Prepare fillings for pastry products.
  • Monitor oven temperatures and product appearance to ensure correct baking times.
  • Oversee the processes of shaping, loading, baking, unloading, de-panning, and cooling batches of bread, rolls, and pastries.
  • Apply glazes to bread and pastry products and decorate cakes with creams and icings.
  • Operate machines that roll and shape dough and cut biscuits.
  • Empty, clean, and grease baking trays, tins, and other kitchen equipment.
  • Manage the supply inventory and place orders as required.
  • Resolve inconsistencies in production and ensure standardisation of products.
  • Supervise, train, and support bakery staff to maintain high production standards and operational efficiency.
  • Maximise revenue and minimise costs without compromising quality and service.
  • Manage staff and issue operational instructions.
  • Handle customer complaints and ensure high levels of customer satisfaction.
  • Continuously enhance the reputation of NYC BAGEL through quality and innovation in baking.
     

Qualifications & experience

Qualifications: Certificate III or IV in Baking (or a related field).

Experience:

  • 1 - 2 years prior experience in an artisan bakery, using specialised techniques for a wide range of handcrafted products.
  • Expertise in fermentation control, hand-shaping, and high-hydration doughs is essential.
  • Knowledge of ingredient selection, quality control, and specialised equipment like deck ovens is required.
  • A broad skill set in traditional baking methods is crucial.

Skills:

  • Experience in hand-shaping high-hydration sourdough.
  • Ability to supervise teams and ensure production efficiency.
  • Knowledge of inventory management and supply ordering.
  • Problem-solving skills to maintain production standardisation.
  • Ability to handle customer interactions and resolve complaints effectively.
