As a Pastrycook, you will be responsible for preparing and baking a variety of pastries, cakes, and desserts while ensuring consistency in taste, texture, and presentation. Key duties include mixing, kneading, and shaping dough, operating baking equipment, and decorating pastries with artistic precision. You will also manage ingredient inventory, liaise with suppliers, and ensure compliance with food safety standards.  

This position is responsible for preparing and baking a wide range of pastries, desserts, and breads. 

 

  • Measure, mix, and prepare ingredients according to recipes and production requirements.
  • Roll, cut, shape, and work dough and pastry products by hand or using equipment, preparing them for baking, along with creating various fillings, glazes, and icings.
  • Operate baking equipment, such as ovens, mixers, and dough sheeters, ensuring correct temperatures and timings for optimal results.
  • Apply advanced techniques to prepare and decorate pastries, ensuring high-quality presentation. 
  • Monitor the quality and consistency of raw materials and finished products, ensuring they meet required standards in taste, texture, and appearance.
  • Oversee the entire baking process, managing each stage from forming and loading to baking, de-panning, and cooling.
  • Manage inventory, order supplies, and liaise with suppliers for timely ingredient procurement.
  • Train and supervise junior pastrycooks or apprentices in techniques and safety protocols.
  • Maintain a clean, sanitary kitchen, ensuring compliance with food safety and occupational health standards.

Tasks & responsibilities

  • Prepare and Bake Pastry Goods, Mix, knead, and bake a variety of pastries, cakes, and desserts according to established recipes and quality standards.
  • Decorate and Present Pastry Items, Creatively design and decorate pastries, ensuring they are visually appealing for display and service.
  • Maintain Inventory and Manage Supplies Monitor stock levels of ingredients, order supplies as needed, and ensure proper storage to maintain freshness and quality.
  • Ensure Compliance with Food Safety Standards, Follow hygiene and safety regulations, ensuring the kitchen environment and all food products meet health and safety guidelines.
  • Innovate and Develop New Recipes, Experiment with new flavors, ingredients, and techniques to create unique pastry offerings that enhance the menu.

Qualifications & experience

The ideal candidate should hold a Certificate III in Cookery or Patisserie and in any case possess equivalent practical experience in a commercial pastry kitchen. A strong background in pastry preparation, baking, and decorating is essential, along with demonstrated experience working in a fast-paced, high-quality patisserie or bakery environment.

Candidates should have proficiency in pastry-making techniques, including dough handling, cake decoration, and chocolate work. A deep understanding of food safety and hygiene regulations is required to maintain strict compliance with industry standards.

Additionally, the role demands strong attention to detail and creativity in designing and presenting visually appealing pastries. The ability to work efficiently under pressure, particularly during peak production times, is crucial.

Experience in inventory management, ingredient procurement, and supplier coordination is an advantage. Candidates with a background in training and supervising junior pastrycooks or apprentices will be highly regarded. A collaborative mindset and ability to contribute to a team-oriented kitchen environment are essential qualities for success in this role.
