Norman Hotel, one of Brisbane's longstanding Iconic steakhouses is looking for a fulltime butcher / experienced portion cutter to manage all things beef for its grill menu featuring over 18 premium beef cuts displayed in its iconic butcher display window. 

About the Position

Under the direction of the Hotels Executive Chef you will manage the day to day requirements of our extensive beef menu. 

Whilst a good proportion of the 3000+ steaks sold weekly is portioned off site by our preferred cutter, you will be required to trim, cut & pack a number of high value cuts that are bought as whole primals. 

In addition you will also manage the production of our additional beef menu items; these include making our own Traditional Wagyu Sausages (real skins, hand-linked), corning and cooking Wagyu outside flats, making burger patties, rendering wagyu fat for tallow, portioning USA pork ribs ready to cook, cutting beef short ribs as well as producing our own Wagyu Jerky. 

In addition to the daily restaurant requirements you will also assist with our Steak Away offering, which is our online ordering takeaway packs. 

You will also oversee the ordering of portioned product from our supplier with the assistance of the head chef and other team members. 

The position offers a great lifestyle with the roster being Monday to Friday from 7am - 4pm. The hotel is open Tuesday to Sunday, so Monday is the day to prepare for the week ahead with majority of deliveries and cutting being done whilst having the kitchen to yourself with another chef. 

About You

We are looking for someone who can work autonomously but also work within a team environment. You will be working amongst a large and young kitchen team so flexibility is a must. 

Having an interest in or a basic understanding of cooking would be a big advantage, but if you are willing to learn, then we will be willing to teach you also.

Not everyday will be the same and you must be able to manage your own workload to ensure that the hotel never runs out of portioned product. 

The Future

Whilst the role is currently based in Woolloongabba, there is real growth opportunity awaiting for the right person. 

Opening in mid 2026 in Brisbane's Northside, Norman Hotel will be expanding with a second venue and in line with our beef ethos we will also be opening a retail butcher shop.
