Hotel Bellinzona is seeking an experienced & confident Sous Chef for it's extensive conference, event and wedding operations. Located in beautiful Daylesford, just 90 minutes from Melbourne, Hotel Bellinzona is the regions pre-eminent bespoke hospitality destination featuring 63 rooms, 9 conference spaces and 2 acres of stunning gardens.
Supported by our newly appointed Head Chef you will working with and leading a team focusing on menu development, execution and the delivery of innovative conference, event and wedding products. We are not “cookie-cutter” in our approach, we work to produce amazing menus utilising some of the best local produce available to us.
Responsibilities include but are not limited to:
Manage day to day operations of the Conference Kitchen
Create innovative, interesting, amazing menus for conference, events and weddings
Lead the way in the execution of these menus
Hands-on involvement with specialised events throughout the year
Collaborate with the Head Chef and Conference & Event Manager
Assist in The Virgin Kitchen when required
Effective and efficient time management and communication skills
Sound knowledge of ingredients, methods of cookery, and allergens
Rostering, ordering and resource allocation
Inventory and budget management, maintaining a good COS
Food safety and HACCP compliance
Demonstrable leadership and experience at Chef level (or above) is an absolute prerequisite for this position. The expectation is for this successful applicant to take charge, be creative, have high attention to detail and lead the way at beautiful Hotel Bellinzona.
